IQF Cheese

Due to the uniform and gentle fluidization in OctoFrost™ IQF freezing tunnel, there is no damage on cheese and no formation of fines and lumps. With five days of production without defrosting and 100% separation, the natural appearance of the IQF cheese is preserved even on sticky products like shredded mozzarella. The lack of fines and lumps results in a high-quality frozen product that can be sold at a premium price.

Product characteristics of the IQF cheese

Future growth in the cheese industry is driven by the increasing demand from the frozen pizza producers. As the IQF cheese has the advantage of being easy to use and spread by the processors, it is gaining increasing popularity on the market of frozen dairies.

A typical pre-treatment for IQF cheese is usually shredding or dicing. However, in the case of mozzarella, sometimes the water content must be increased therefore water spraying is a possible practice before or after the freezing.

The OctoFrost™ tunnel freezer is ideal for IQF cheese due to a number of specific technical features. The frequency inverter controlled motors allow airflow and air pressure control which avoids overblowing and formation of fines and therefore prolongs the time between defrost. Some of OctoFrost customers are able to freeze for up to 5 days without defrosting.

The “browning effect” is completely avoided in the OctoFrost™ IQF tunnel freezer due to the possibility of quick crust freezing and effective fluidization which takes place in the freezer. In addition, OctoFrost™ freezer has the following food safety features: free-standing, no joints, easy access for cleaning, removable bedplates, and cleanable design – all contributing to a truly reliable food safety.
