Chilling tropical fruits is usually done to decrease the core temperature of the product before IQF freezing, for a better freezing result and higher capacity.
Tropical fruits processors understand the importance of preserving the natural color and texture of the fruit while also maintaining the brix level of the fruits, this is even more important to keep in mind when processing dices or halves (open structure of the meat).
Chilling can be done with cold water or cold air however the cold air chilling can cause product dehydration which will affect the yield and the product quality. This is why the OctoFrost™ IF Chiller is featuring a rain-shower system which will achieve fast chilling of the product but also high yield and a high-quality product.
In addition to the advantage of no dehydration for the product, the OctoFrost™ chilling tunnel brings a number of important benefits, when chilling tropical fruits. For a premium product, chilling must be quick and that can be achieved by having the same temperature of the chilled water in all parts of the chilling machine. This is the reason why the OctoFrost engineers have designed this chilling tunnel with a crossflow water system. A crossflow system means that the high volume of filtered and recirculated 1°C water is distributed evenly across the whole width and length of the chiller; deluging the product and immediately exiting through the sides of the chiller to be re-chilled by the PHE. (A traditional counter-flow water system would have the cold water enter from the opposite side of the product infeed. This water will be passed again and again through the product which means that it will warm-up while passing through the whole length of the chiller. This means longer chilling time and significantly less control over the water temperature and core temperature of the product).
The system of the OctoFros™ IF chiller is designed to reach a product core temperature of 5°C or less. As the water is falling gently over the product by means of gravitation only, the product preserves its natural appearance.
